1.5 lbs Skirt Steak or Flank Steak
3 large Bell Peppers (Red, Green, Yellow)
1 medium Yellow Onio
2 tablespoons Olive Oil or Avocado Oil
2 tablespoons Fresh Lime Juice
1 tablespoon Chili Powder
1 teaspoon Cumi
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
Salt and Black Pepper to taste
810 small Corn or Flour Tortillas


Instructions

  1. Slice the steak thinly against the grain. Mix chili powder, cumin, garlic powder, smoked paprika, salt, and pepper in a bowl. Coat the steak with the spice blend
  2. Heat one tablespoon of oil in a large skillet over medium-high heat. Sauté sliced bell peppers and onions for 5-7 minutes until soft and charred. Remove and set aside
  3. Add the remaining oil to the skillet and heat to high. Sear the steak in a single layer without moving for 2 minutes, then flip and cook for another 1-2 minutes until just cooked
  4. Return the vegetables to the skillet, add lime juice, and toss to combine for 30 seconds
  5. Serve immediately, transferring the mixture to a serving platter with warm tortillas and your favorite toppings

Use a cast-iron skillet for the best heat retention.

Warm your tortillas directly over a low gas flame or in a dry pan.
