1 lb Ground Beef (Lean)
0.5 lb Ground Pork
1/2 cup Breadcrumbs
1/4 cup Milk or Heavy Cream
1 large Egg
1 small Yellow Onio
1/2 tsp Allspice
1/2 tsp Nutmeg
2 cups Beef Broth
2 tbsp All-Purpose Flour
2 tbsp Fresh Parsley
Instructions
- Prepare the Panade: In a large mixing bowl, combine the breadcrumbs and milk. Let them sit for five minutes
- Mix the Ingredients: Add the ground beef, ground pork, whisked egg, grated onion, allspice, nutmeg, salt, and pepper to the bowl. Gently combine
- Roll the Meatballs: Scoop about one tablespoon of the mixture and roll into small balls. Aim for approximately 24 to 30 meatballs
- Sear the Meat: Heat a skillet over medium-high heat, add a drizzle of olive oil, and sear the meatballs
- Make the Roux: In the same skillet, whisk together butter and flour until it turns light golden brow
- Simmer the Gravy: Slowly pour in beef broth while whisking, bring to a simmer, and add a splash of heavy cream
- Final Cook: Place meatballs back into the skillet, cover and simmer for 8 to 10 minutes until cooked through
- Garnish and Serve: Sprinkle fresh parsley and serve hot
