Taco Ranch Bites are a vibrant appetizer combining robust Mexican flavors with a refreshing ranch twist. These bites are high in protein and fiber and easy to prepare, making them a great snack or quick meal option.
Ingredients
1 lb Ground Turkey or Grass-Fed Beef
15–20 units Mini Bell Peppers or Large Cucumber Slices
1 cup Plain Greek Yogurt or Cashew Cream
2 tbsp Fresh Dill, Minced
2 tbsp Fresh Parsley, Minced
2 tbsp Fresh Chives, Minced
1 tsp Cumi
1 tsp Chili Powder
1 tsp Smoked Paprika
1 tsp Garlic Powder
Sea Salt, to taste
Freshly Cracked Black Pepper, to taste
As desired Avocado, Microgreens, and Radish Slices
Instructions
- Wash your mini bell peppers or cucumbers thoroughly. For peppers, slice them in half lengthwise and remove seeds. For cucumbers, slice into thick rounds and hollow out
- Heat a cast-iron skillet over medium-high heat and add a drizzle of avocado oil. Brown the ground protein completely, draining any excess fat
- Reduce heat to low, stir in cumin, chili powder, smoked paprika, and garlic powder. Add a splash of bone broth or water, let it simmer for three minutes
- In a medium bowl, combine Greek yogurt, minced dill, parsley, chives, lime juice, and a pinch of sea salt. Mix until smooth
- Spoon seasoned meat into each mini pepper or cucumber round and top with ranch sauce
- Garnish with radish slices, avocado, and microgreens
Notes
For a spicier version, add minced jalapeños or a dash of cayenne pepper.
Store meat and ranch sauce separately to preserve freshness.
