Description

This Zesty Greek Chicken Marinade achieves a perfect balance of acidity and fat, guaranteeing deep flavor penetration and enhanced tenderness, transforming standard chicken breasts into a succulent centerpiece.


Ingredients

1/2 cup Extra Virgin Olive Oil
1/4 cup Fresh Lemon Juice
4 cloves Fresh Garlic (Minced)
2 tablespoons Dried Oregano
1 teaspoon Kosher Salt
1/2 teaspoon Black Pepper
1/4 teaspoon Red Pepper Flakes


Instructions

  1. In a medium glass bowl, combine the extra virgin olive oil and lemon juice. Whisk vigorously until the mixture is slightly thickened
  2. Add minced garlic, dried oregano, salt, pepper, and red pepper flakes to the emulsion. Stir them in to extract flavors
  3. Place chicken in a large resealable silicone bag or shallow glass dish, ensuring even thickness
  4. Pour the marinade over the chicken, massaging to ensure thorough coverage
  5. Seal the container and refrigerate for at least 30 minutes, but not exceeding 4 hours
  6. Remove from refrigerator 15 minutes before cooking to reach room temperature

Notes

Pat chicken dry before cooking to ensure proper searing.

Use a meat thermometer to check that chicken reaches 165 degrees Fahrenheit.
