Description

Ingredients

16 oz Tri-color Rotini Pasta
1216 oz Zesty Italian Dressing
1 pint Cherry Tomatoes, halved
1 large English Cucumber, diced
2.25 oz can Black Olives, sliced
2 medium Bell Peppers, diced
1/2 small Red Onion, finely diced
8 oz Mozzarella Pearls
1/4 cup Grated Parmesa
2 tbsp Fresh Parsley, finely chopped


Instructions

  1. Boil the Pasta in salted water until al dente, then drain and rinse with cold water
  2. Prep the Vegetables by washing and dicing them
  3. Combine the cooled pasta with the vegetables, mozzarella, and olives in a large bowl
  4. Add 3/4 of the dressing and toss to coat
  5. Sprinkle with Parmesan and parsley, add black pepper if desired, and toss agai
  6. Chill for at least 30 minutes before serving, adding more dressing as needed

Notes

Always rinse the pasta after boiling to prevent it from becoming gummy.

Reserve some dressing to add right before serving for freshness.
