Ingredients
1.5 cups All-Purpose Flour
2 teaspoons Baking Powder
1 teaspoon Ground Cinnamo
1 teaspoon Ground Nutmeg
1 teaspoon Ground Ginger
1/2 cup Pure Pumpkin Puree
1 cup Whole Milk or Oat Milk
1 Large Egg
2 tablespoons Pure Maple Syrup
Mini Chocolate Chips as Needed
Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and aromatic spices. Use a whisk to evenly distribute the spices
- In a separate bowl, beat the egg and stir in the pumpkin puree, milk, and maple syrup until smooth
- Gently fold the wet ingredients into the dry ingredients, stopping as soon as the flour disappears
- Heat a non-stick skillet over medium-low heat and lightly grease it. Pour about a quarter-cup of batter for each pancake, shaping slightly irregular circles
- While the batter is still wet, use mini chocolate chips to create faces on the pancakes
- Once bubbles form on the surface, flip the pancake and cook until golden brow

For a vegan version, replace the egg with a flax egg and use almond or soy milk.
